Is it possible to make bread with soaked wheat?

    I've seen some breads use sprouted wheat, ground to a thick paste, but this was always a very small quantity and always used along with wheat flour.

    Is it possible to make bread with soaked and ground wheat? Say I soak wheat berries or sprout them and then grind it using a wet grinder or a heavy duty blender to make a thick batter and add some proofed yeast to this, knead, rise, knead, shape and bake.. Would it work? If not, Why?

    Just curious.

    don't know about soaked and ground, but peter reinhart's 'whole grain breads' has one that uses a large quantity of sprouted wheat. soaked wheat should work. it's just wheat and water, right? cracked wheat bread with water works, so this should too. about 50% plus all purpose flour. you can definitely make pitas with all soaked and ground wheat and water.

    I'll give pitas a try. Sounds like a great way to get some sprouts in to my little one. She loves pita-pizza!
