Sugar-free Lychee-Coconut Popsicles (Vegan)

Tender coconut pulp + fruit + coconut milk = a refreshing vegan ice cream. The spiced rum adds a nice tropical twist.
These days we almost always make popsicles because there’s no need to really measure ingredients, you don’t need an ice cream machine, and if you’re making a low-fat version you don’t need to wrestle with a scoop to get it out of the container. Besides, you can make as little or as much as you like based on what leftover fruit you have.

LYCHEE-COCONUT POPSICLES
(makes about 3 cups)
1.5 cups lychees, fresh or canned
**measure after peeling and seeding. If using canned, measure after draining the liquid.
half cup tender/green coconut pulp, fresh or frozen
**you can use fresh/frozen/dry grated regular coconut, but it will be less sweet and more fatty.
1 cup light coconut milk
**Homemade is best. Just blend 2 parts fresh/frozen coconut with 1 part warm water and squeeze out the “milk”.
1/8 tsp salt
1 tbsp lime juice
2 tbsp spiced rum (optional)
sweetener to taste
**I used a combination of liquid Stevia and lo han extract (SlimSweet). You could use anything you like, including the sugar syrup from the lychee can.
Blend everything to a fine puree. Taste for sweetness. It should be just a shade sweeter than you like it. Chilled things taste less sweet than at room temperature.
Freeze in molds until set.

I cant think of anything more fun and refreshing for the summer. I make a lychee and tender coconut pudding with condensed milk and agar agar. Ive bookmarked your frozen vegan version. yum!
