Cucumber Chips

I know. What the frakk? But J’s abroad eating great food and I’m not about to eat plain cukes for dinner.
Plus I had to do something with the one frankencuke I had left after I donated 10 feet of them to the farmer’s stand lady. I told her I’d be bringing more.
There’s no reason to make these unless you stand to win a bet or something. This post is just to prove that it’s possible. If you have one of those dehydrator thingies, use it.
For cucumber chips, you need the dryer Asian or Armenian ones, not the really moist English cucumbers.
I pulled out a mandoline, sliced them thickish (about 1/6th of an inch), tossed them with raw mustard oil, salt and chilli powder, and baked them.
375F on convection setting, 400F on regular setting. After 25 mins, I turned them. Then I waited and waited. At about 45 mins., I just pulled them out of the oven, layered them on a plate and microwaved them at 70% power on one side for 40 seconds. Then turned them over on to another plate and nuked them for another 40 seconds.
I haven’t eaten them yet. So I have no idea what they taste like. I’m not even sure I want to eat them.
UPDATE: They’re quite yummy actually. I can’t taste any cuke, just salt and chilli powder.

How strange, but I was thinking “She could make cucumber chips” after reading your post bemoaning abundant cukes. The microwave-them-part after the bake-them-part reminds me of a post I read on making shaved asparagus puffs.
I was thinking chips, or dehydrating and grinding them with salt to store as a pantry spice.

Perhaps while Jai is away you could hostess a healthy facial party for all your friends or the entire neighborhood to include cucumber eye compresses, fresh from the refrigerator! With gazpacho for all!
Since the chips are delicious however I say make as many as you can and see if they store well in a cool dry space. Or eat them all…
My last thought was to split one or more open and leave them out for birds to feast upon the seeds. Share the wealth, etc.

why dntya leave them to ripe…? btw do this specific ones ripe? I love ripened, abt to fall apart cukes, its great with a dab of jaggery.
