Day 9: Basil-Artichoke Pesto (Vegan)

Since artichokes are so effective in improving liver function, we’ve been trying to include them regularly in our diet.
This pesto is so creamy, delicious and easy, that I will be making it on a regular basis. It has neither pine nuts, nor parmesan cheese. I’m not a fan of pine nuts and usually replace them, as well as the cheese, with lots of almonds or cashews. (see Basil-Almond Pesto)
This one has no nuts at all. The artichokes impart the creaminess without all the added fat. You can use frozen artichokes for this. I simply added the ones from the big Costco jar.
Since I didn’t have enough fresh basil, I added some dried basil and cilantro as well.

Basil from our Garden
I don’t have measurements ‘cos I just threw things in the blender one after the other.
a handful of basil (I used both fresh and dried)
a handful of cilantro
4 artichoke hearts (frozen or canned)
two hot green chillies
1 tsp white miso paste
1 tbsp roasted garlic paste
a squirt of lime juice
a tbsp of extra virgin olive oil
Blend and add salt to taste.

MENU
July 18 (Day 9)
Breakfast:
Black tea with almond milk
10 oz. smoothie with pea and rice protein, mango and raspberries
Mid-morning:
1.5 cups cantaloupe blended with 6 oz. coconut water and lime.
Lunch:
half cup lentil-cabbage kootu
2 cups salad with raw buckwheat sprouts, cucumber, carrot, zucchini, beets and apples topped with basil-almond pesto
Mid-afternoon:
1 cup roasted potato
Dinner:
16 oz. protein shake with pea and rice protein, flax powder, raspberries, orange, peach, carrot, kiwi, kale, bok choy, banana.
1 glass champagne.
EXERCISE
Morning: 1 hr. weights, 1 hr. yoga
Evening: 30 mins kettlebells
