Recipe Marathon: Final Day (Day 7).

Vegans are always scouring for calcium-rich recipes, and hummus is at the top of the list.

It’s got two ingredients that meet that criterion – chickpeas/garbanzo beans and sesame seeds. Two tbsps sesame seeds have 17% of the daily value of calcium, while chickpeas have 190mg per 100 grams cooked.

We’ve posted some hummus variations before – Olive Hummus and Lima Bean Hummus. This time we added some pumpkin. Chickpeas and yellow pumpkin make a great combination.

PUMPKIN HUMMUS

Makes about 1.5 cups.

1. The Pumpkin

Peel, cube and steam any yellow pumpkin (butternut/hubbard/banana/acorn squash) until tender. Use very little or no water while steaming. We used a bamboo steamer placed on our wok. You can steam it in the pressure cooker in a container with about 2 tbsps water or in the microwave with 2 tbsps water covered.

Or roast it until tender.

Canned or frozen will work as well.

2. The Chickpeas

Soak 1/3 cup chickpeas overnight and cook to tender. Save about 1/2 cup cooking liquid and drain. If using canned chickpeas, drain, rinse and discard the water in the can.

3. The Sesame Seeds

We’ve found that grinding up brown sesame seeds gives a much better flavour than using ready-made tahini (white sesame seed paste in stale refined oil). White sesame seeds are brown sesame seeds with the bran (and many nutrients) removed.

Grind up
4 tbsps brown sesame seeds

in the food processor jar you will use to blend the hummus. When they start releasing their oils, add

1 cup cooked cubed yellow pumpkin
1 cup cooked chickpeas
1/4 cup lemon or lime juice
3 tbsps extra virgin olive oil
2 cloves garlic
1/4 tsp cumin powder
1/4 tsp cayenne (chilli) powder
salt to taste

and as much of the chickpea liquid/water as you need.

Stir in
1/2 tsp dried oregano

and top with more cayenne powder or paprika.

  28. Looks delicious. I didn’t know about brown sesame seeds. Thought they only sold white and toasted. I’ll have to look more carefully in the grocery aisle.

    this looks like a nice variation to the traditional hummus! though ive never seen brown sesame before, only the black ones and the hulled sesame.
