This dish was inspired by the Gujarati Dal Dhokli, where wheat dumplings are added to a lentil base. This is easier with readymade lentil wafers (available at any south Asian grocery) added to greens as they wilt down. Lower in carbs and much quicker. Frozen, thawed spinach will work too.

Papads/pappadums are usually roasted or deep-fried. Braising them in this manner gives them a different texture.

PAPAD PALAK (Spinach with Lentil Wafers)

Serves 2

Checklist :

8 oz. organic spinach
1 small piece of ginger
2 cloves garlic
1 tsp cumin seeds
1/3 tsp cayenne powder
1/2 tsp coriander powder
2 tsps oil or ghee
salt
lime juice (optional)
about 8 uncooked coin-sized mini-papads or 1 large plate-sized papad broken up.

colander, big pan, spatula, knife, cutting board, mortar and pestle, serving spoon, bowl.

Task:
1. Rinse the spinach leaves in a colander and set aside.

2. Using a mortar and pestle, smash the garlic, remove the peels, add the ginger and make a paste.

3. Heat the oil in a big pan on medium. When it it hot, add the cumin seeds. When they sizzle, add the ginger-garlic paste and the spice powders. After 30 seconds stir in the spinach a handful at a time until it wilts.

4. Add the papads and simmer covered for 2 to 3 minutes. They will absorb some of the spinach liquid and soften. Check seasonings.
Add a twist of lime if you like.

Transfer to a bowl and dig in.

    This is very unusual food combination,and come to think of it that this remark comes from a Sindhi ..we are world (ill ) famous for eating everything with a papad..lol

    It does seem to be suitable for cooking in no time challenge. Spinach is one of the few greens that I can eat with just some simple sautéing. Nice photos too , which is expected from you guys .

    The pitures are beautiful. We are so used to eating Pappads on the side, never as a part of a dish. This idea gives a nice crunch to the greens.
