Wheat and Almond Pudding (Aate ka Sheera)
July 8, 2008 |

My Birthday Brunch: Aate ka Sheera
Pronounced aah-tay kah shee-rah. Also called Aate ka halwa. In Hindi, aata = wheat flour, sheera = pudding.
Thank you for the birthday wishes and greetings you have sent me (and J) by e-mail and in the comments section. You truly make us feel special.
As a certified wheat addict, I had to bookmark this recipe when I saw it. This is Manasvi’s grandmother’s recipe from Rajasthan. It’s simple, flexible and takes about ten minutes to put together.
This can be easily veganised by substituting the ghee (clarified butter) with transfat-free margarine. If using regular butter, cook it for three or four minutes until it loses some of the water content and gets a nutty aroma.
This is very good stuff. Thank you, Manasvi.
WHEAT AND ALMOND PUDDING (AATE KA SHEERA)
from pedatha.com
Serves 3 to 4.
1 cup whole wheat flour
**either the fine-ground chapati flour/aata or regular whole wheat flour will work for this
1/4 cup whole almonds or store-bought slivered almonds
1 cup sugar (I used 2/3 cup raw cane sugar)
1/2 cup ghee (clarified butter) (I used 1/4 cup)
hot water - 2 cups
a few drops rose water (my addition)
(Pssttt …. I added a couple more things, but since I’m sending it to Nupur’s Less is More event where one has to stick to five ingredients or less (water doesn’t count), I’m not telling.)
Heat the ghee, add the flour, stir until kinda roasted and aromatic.
If using whole almonds, soak them for a couple of hours, skin them, pat them dry and grind them to a coarse powder. Too much work. I just ground pre-skinned slivered almonds in my spice grinder.
Add the almond powder to the wheat and ghee mixture and cook the whole thing for five more minutes until it is rich brown. The deeper the colour, the better the flavour.
Heat 2 cups water in a kettle or in the microwave. Add it to the mixture and stir until the water is absorbed. You may need 1/4 cup more water depending on the grind of the flour you’re using.
Add the sugar and the rose water (You can substitute the rose water with green cardamom or saffron). Cook for a minute or two until the sugar melts.
Take it off the stove, take a picture, dig in while it’s still hot.
Aate ka Sheera from pedatha.com is our entry for Monthly Blog Patrol, hosted this month by Nupur @ One Hot Stove, where the theme is Less is More.

Growing up, aate ka halwa used to be a birthday staple in our household. I’ve heard stories of people using ghee/flour/sugar (along with a couple of tablespoons of semolina) in a 1:1:1 proportion for the finest kind.
Many many happy returns of the day!

Happy Birthday Bee and Advance greetings to Jai…Jeevam sharad shatam (may you live a hundred years).
How sweet of you to share this with us…we are all so delighted, manasvi and her nani too…
Wishing you both hitaayu, sukhaayu and deerghaayu (as you can make out, I am generally showing off the fact that we are knee deep into Ayurvedic research :), but honestly, to wish for a long life is an incomplete wish, longevity has to be accompanied with all that which is beneficial as well as pleasant. Cheers.
Hi bee, Oh I forgot to mention that I liked your addition of rose water, I am going to try that. And pre-skinned slivered almonds can be added as it is, without grinding them. Is such a thing available in the market?

Oh I am so late on blog patrol. Belated birthday wishes, Bee. Those colored ramekins are beauuutiful. Are they cupcake molds?
thanks. they’re plastic icecream bowls - much bigger than cupcake molds.
Dear B Aunty,
I am Pratibha’s daughter, Manasvi.
I absolutely love the picture that you have posted here. It makes the seera look even more delicious. I love photography and am now wondering why I did not think of experimenting with the photograph and making it look…well, like a seera should!!
My Naani sends her blessings and good wishes to you. My mum is quite a fan of your blog and have heard a lot about you as well from her. I enjoy experimenting in cooking (have been cooking ever since I was 11 i think) and being in UK gives me even more of an opportunity to do so.
Thank you very much for trying out the recipe that I had posted.
hi, manasvi. thanks for dropping by. we look forward to more recipes and pics from you.
