Roasted Asparagus, Carrots and Zucchini with Herbs

Over the past few days we’ve hardly been inclined to cook, even less inclined to take pictures.
Honestly, my brain is frozen right now and while there is a huge pile of work pending, I can’t bring myself to focus. So I thought I’d post about what we had for dinner tonight. Blogging affords me the freedom to babble on without the compelling urge to make sense.
I often wonder: why do we need to record for posterity (or until we lose this domain) what we had for dinner? Who the heck cares? Talk about hubris.
However, as I discovered, noting down inane things on cyberspace has its uses. I found these yellow carrots in the fridge and was trying to remember when we bought them. Duh.. look it up on the blog.
Those yellow carrots have been in there for over a week. The zucchini was positively ancient, and I don’t really recall when we bought the asparagus, though it looked relatively fresh.
All of them got chopped (about 6 to 7 cups of chopped veggies) and tossed on a couple of baking sheets with
2 tbsp olive oil (total)
1/2 tsp cayenne powder
1/2 tsp cumin powder
1/2 tsp coriander powder
and salt,
and baked at 400F for …. maybe 20 minutes. They should be cooked, but crisp.
The dominant flavour in the dressing comes from the fresh herbs. We used pineapple sage, cilantro, parsley, thyme, fennel, mint, oregano, lemon basil and marjoram from our garden.

Mix together
2 tbsp pomegranate molasses (or balsamic vinegar)
2 tbsp orange juice
1 tbsp lemon juice
1 tsp lemon zest
salt and pepper to taste.
Add one handful of chopped fresh herbs and the roasted veggies and toss together.
Take picture.
Serve immediately.

Lovely dish Bee! But do you know there are people who start their day after reading your post ? And they feel down to see yesterday’s post staring at them on your dull days ? Anyway thanks for posting about your dinner. But reading your blog everyday is like talking to you people and knowing that yor are doing well, are high in your spirits! Thats more soothing for person living in other corner of the world! And thats this large yet strong web, the blogging world had spun people around the corners of the world with just “WORDS”!

those fresh herbs look great… i took your advice and planted some sprouting garlic, but nothing happened for over 3 weeks! I’m thinking it could be the incredibly hot summer we’re having - its probably killing all the plants!
over-watering can kill them too.

I also sometimes wonder why I record things from the past. I think the answer is that it makes me feel that if I do so, they won’t get lost forever. Of course, this is a completely silly feeling, which doesn’t hold against time going by continuously, but it exists.
Memories on blog even look beautiful, sometimes even better than what they were when we were living the facts/eating the food. Or maybe, vice versa, taking pictures knowing that you want to record something somehow obliges you to look at the best part of what you’re living.
And of course, blogging about your memories create bonds and contacts with people all over the world, which is a wonderful experience in itself with repercussions in your and others’ ‘real’ and present life. So, for now, I think I’ll keep blogging…
Its all a phase. You’ll get back. TC.

Roasted vgeteables to the rescue
They are the nicest thing one can ask for on a busy day! Best part is that the fresh ingredients do the trick, i don’t have to do much.
