I absolutely love roasted red peppers as well. I toss them in a corn chowder, and they are surprisingly delicious on a homemade barbequed hamburger in addition to all of the usual fixins' (ketchup, relish, mustard, roasted red peppers, and sauteed onions is my 'works').
