Roasted Red Peppers

Roasted red peppers are a versatile ingredient that can be used to make sauces, soups, salads, dips, spreads, pizza toppings … anything, really.

Try and get organic red peppers. Bell peppers are one of the dirty dozen foods sprayed with a lot of pesticides.

If they are not organic, wash them well with a drop of dish soap and dry them.

Line a baking sheet with foil and smear a few drops of olive oil on the foil.

We find that roasting them whole makes it messier to remove the seeds after they are cooked, but makes them juicier in the end.

If you are in a hurry, cut them in halves, remove the pith and seeds, and place them on the sheet cut side down. You need to cook them only on one side until blistered - for about 6 to 8 minutes broiled on HIGH.

Else, place the whole peppers on the sheet, broil them on one side until you have blisters and charred spots, then turn them over and do the same - 12-15 minutes total.

Place them in a container with a lid, covered for about 20 minutes. We leave some of the blistered bits of skin on for a smoky flavour.

Deseed, cut into strips, and use. We use the juices that collect in the container as well - in soups, stews or curries.

Green, orange or yellow peppers can also be roasted this way.

    I agree that you can make anything with roasted bell peppers. I can’t wait for them to appear at our farmers’ market. And I love the smell while they roast.

  4. I love roasting my own peppers as opposed to getting them in a jar. It’s convenient but I prefer homemade. I made a roasted red pepper pesto this week. Garlic, roasted peppers, salt, pepper, really good and flavorful oil and nuts. Grind them in a bledner until a gritty consistency. The husband and I spread the pesto on crackers and finished the entire batch in 10 minutes. so good..

    Roasted bell peppers are so versatile, i add them to so many dishes and the flavor it imparts to the dish is so good everytime. And the very appealing smell when it gets roasted! Heavenly!!

    Wow - never knew of the “dirty dozen”. I eat at least 8 of those 12 food regularly and have never bothered buying organic or washing with soap! Scary. On the bright side, I have no pests in my stomach, I suppose!

    post and pic made me hungry. I roast them in the same way, but mine is the unhealthy version…with mashed potatoes and onions stuffed in them and then roasted.. really hungry now

    Red peppers are quite expensive here,so I use them sparingly in salads, pasta or where they need to be roasted. For other stuff I use the usual green peppers.

    I prefer roasting them over the flame like the big aubergines, then covering them with foil and then peeling them.

    They are wonderful mixed with roasted aubergines and onions with some toasted bread and grilled sardines and some extra olive oil on top and thick sea salt… How you like it? Have it fresh in summer nights… mmmmmmmMMmmm

    I absolutely love roasted red peppers as well. I toss them in a corn chowder, and they are surprisingly delicious on a homemade barbequed hamburger in addition to all of the usual fixins’ (ketchup, relish, mustard, roasted red peppers, and sauteed onions is my ‘works’).
