Baked Strawberries with Lavender and Rosemary
March 24, 2008 |
When we saw this recipe @ A Life (Time) of Cooking over the weekend, we had to try it right away. We’re glad we did.

We went around the house and yard foraging for herbs. The only evergreen perennials that we have over the winter are the rosemary (which we brought indoors), and the lavenders.
We had to preheat the oven to 400 F for bread. While that was happening, we popped in a glass baking dish with a pound of hulled strawberries (We cut the huge ones in halves). Drizzled 2 tbsp orange blossom honey, mixed in 2 tsps each of fresh lavender and rosemary, 1 tbsp cognac, and sat down to dinner.
30 minutes later, they were juicy and syrupy, while enveloping the whole house in a heavenly aroma. (Check at 20 minutes if the berries are smaller, or if you like them firmer.)
We saved some of the syrup in a squirt bottle for strawberry lemonade.
We will be making this very often, with a whole range of fruit. The smoky fragrance of the lavender and rosemary balanced the sweetness of the strawberry really well. Try adding a grind of black pepper on top. Fantastic.
Thank you, dear VegeYum, for an inspirational blog, and a delightful recipe.

What an interesting combination of flavors! And then, great photos, as always.
Sounds interesting!!!
Hi bee, it looks fabulous. I am so glad that you tried rosemary and lavender - the sort of thing that I would do too. When I used to make this dish a decade ago, I would use buddleah sugar that I made myself. Buddleah is a bush with very very highly, honey scented flowers that would attract butterflies. I had half a dozen of these plants in my garden, and I would gather the flowers and make buddleah sugar the way that you normally make vanilla sugar.
This would be the sugar that I would use with the strawberries. It was extraordinary.
I will add your combination to my post, and link to your post if you don’t mind.
sure. - b.

The grind of black pepper sounds interesting to this beautiful dish! We teach a barbque and grilling class that involves lots of fruit and we’ll to try your black pepper recommendation and share it with our students!

While I am not a huge fan of warm strawberries there are certain dishes that I do enjoy where the strawberries are baked. This certainly sounds delish!
We tried this out this evening. The aroma was divine. And the flavor exquisite.
Awwwhhh! Great combination! Never tried strawberries with herbs before… I might copy and paste this recipe in my kitchen too!!!
We made this last night with vanilla bean, honey and rosemary. It was such a great dessert. We were licking our plates to not waste a drop of all that great sauce!! I made individual servings in ramekins. Thanks for the intro to such a simple dish.
