Savoury Bread Pudding

Cathy @ Not Eating Out in New York is a real sport.

One of her readers remarked that her Baba Ghanoush was “the ugliest delicious food”.

So Cathy announced The Ugliest Gourmet contest inviting entries for “your most unsightly yet delicious dish”.

Ha!!!! We had a sure winner in the looks department with our f’ugly dirty diaper dish.

Her Baba Ghanoush looks angelic in contrast. The problem was that the dirty diaper also tasted like one.

So we turned to our Savoury Bread Pudding, which is really delish, without the looks to match.

We followed Nic’s recipe for Artichoke and Parmesan Bread Pudding, with a few changes. This is the perfect dish to use up odds and ends from the fridge.

Savoury Bread Pudding

4-5 cups whole wheat bread, cut into 1-inch chunks
1 cup egg whites (or 4 whole eggs)
2 cups milk (we used lowfat)
1/2 cup chopped black olives
1/2 tsp salt
1/2 tsp cayenne
1/2 tsp ground black pepper
1/2 tsp roasted and crushed cumin
1 tablespoon chopped fresh thyme (or 1 tsp dried)
1 tsp lemon zest
1/2 cup parmesan cheese (finely shredded)
1 cup chopped artichoke hearts (from a jar)
1/4 cup chopped sundried tomatoes
1/2 cup chopped spring onions (greens and white)

1. Preheat oven to 350F.

2. Whisk together eggs, milk, salt, cayenne, pepper, cumin, thyme and parmesan cheese. Stir in bread chunks, chopped spring onions, lemon zest, black pepper, olives, sundried tomatoes and artichoke hearts. Let mixture stand, pressing down occasionally, for at least 15-20 minutes so the bread can soak up the milk mixture.

3. Pour into an 8-inch square baking dish (ungreased) and bake for 45-50 minutes, until a knife comes out fairly clean (but moist) when inserted into the center.

4. Can be served hot or at room temperature.

    Savory Bread pudding sounds yum but it does look ugly scary like a one eyed monster! Great entry btw!:)

    If you call the first picture ugly, then you should change the definition of ugly :D .

    That is a really funny event!!! Dirty Diaper!! eeks!! reminds me of the scene in the recent movie “Hey Baby!!”

    I’ve been staring into the second picture, and it looks liek a side view a dog’s face to me! with black eyes & a green nose..I even see a mouth! :laugh:

    Aww come on….you guys just tried your damndest to take a bad pic I am sure. Wouldnt mind that doing myself sometimes… posting a decent pic is stressful :-)
    Now you should start a contest asking people to describe what the pudding looks like to them. RP has set the ball rolling already.
    My bit? stuffing of a reaaaaaaalllly ancient pillow that hasn’t been washed in ages :laugh:

    bad pics happen. this one was taken about six months ago one day when we just couldn’t give a damn how it turned out. we forgot about it until this event showed up. – b.

    That event sounds interesting :) for a ‘no photographic skills’ person like me :) . Even the tastiest dishes photo turn out ugly :embarrass, it is stressfull to take a good pic :devil:

    Somehow, I like the glorious colours in that spoon and in the background. I also had another look after seeing the dog and pig comments and there IS a resemblance, but I still like the pic.

    Ugly? These two pics? Its on BTW beauty is on the eyes of the beholder. Both the pics looks lovely to me. I think a dish with raddish will look ugly to u bee ;) )
