Savoury Bread Pudding

Cathy @ Not Eating Out in New York is a real sport.
One of her readers remarked that her Baba Ghanoush was “the ugliest delicious food”.
So Cathy announced The Ugliest Gourmet contest inviting entries for “your most unsightly yet delicious dish”.
Ha!!!! We had a sure winner in the looks department with our f’ugly dirty diaper dish.

Her Baba Ghanoush looks angelic in contrast. The problem was that the dirty diaper also tasted like one.
So we turned to our Savoury Bread Pudding, which is really delish, without the looks to match.
We followed Nic’s recipe for Artichoke and Parmesan Bread Pudding, with a few changes. This is the perfect dish to use up odds and ends from the fridge.

Savoury Bread Pudding
4-5 cups whole wheat bread, cut into 1-inch chunks
1 cup egg whites (or 4 whole eggs)
2 cups milk (we used lowfat)
1/2 cup chopped black olives
1/2 tsp salt
1/2 tsp cayenne
1/2 tsp ground black pepper
1/2 tsp roasted and crushed cumin
1 tablespoon chopped fresh thyme (or 1 tsp dried)
1 tsp lemon zest
1/2 cup parmesan cheese (finely shredded)
1 cup chopped artichoke hearts (from a jar)
1/4 cup chopped sundried tomatoes
1/2 cup chopped spring onions (greens and white)
1. Preheat oven to 350F.
2. Whisk together eggs, milk, salt, cayenne, pepper, cumin, thyme and parmesan cheese. Stir in bread chunks, chopped spring onions, lemon zest, black pepper, olives, sundried tomatoes and artichoke hearts. Let mixture stand, pressing down occasionally, for at least 15-20 minutes so the bread can soak up the milk mixture.
3. Pour into an 8-inch square baking dish (ungreased) and bake for 45-50 minutes, until a knife comes out fairly clean (but moist) when inserted into the center.
4. Can be served hot or at room temperature.

Which is your entry? First one is look good to me, must have tasted ugly but then it’s all your fault if it did!;D
Savory Bread pudding sounds yum but it does look ugly scary like a one eyed monster! Great entry btw!:)

The bread pudding sounds amazing. I never would have thought to do a savory. I may have to make this for Thanksgiving.
I had a pic of stuffed figs that looked like that creature from ‘Tremors’. Its all in a day’s work.
Does it have to look ugly in the pic or in real when plated ? I have many ugly pics that never got posted. Maybe I should send all of them to this event

for a ‘no photographic skills’ person like me :). Even the tastiest dishes photo turn out ugly :embarrass, it is stressfull to take a good pic
Breadpudding looks ugly indeed, so gr8 entry for the event.
Somehow, I like the glorious colours in that spoon and in the background. I also had another look after seeing the dog and pig comments and there IS a resemblance, but I still like the pic.

Ugly? These two pics? Its on BTW beauty is on the eyes of the beholder. Both the pics looks lovely to me. I think a dish with raddish will look ugly to u bee ;))
