E-D of Indian Vegetables

How do Indians treat vegetables? That’s precisely what the A-Z of Indian Vegetables event set out to explore.
We didn’t catch the A-Z bandwagon until it had rolled into Station E. By that time we were already huffing and puffing, drinking through a firehose, battling code demons, silently cursing ourselves for adding another venture into our busy lives. However, participating in the A-Z event was very fulfilling because we learnt a lot about Indian regional cuisines in the process. Thank you Nupur, for the opportunity.
We were attempting 20 out of the 26 entries for the first time.
Staying within the core theme of the event was surely not easy, but we are happy with the end result. Presented below are links to our event entries (E to Z) and four others (A to D) which make up the Jugalbandi “E-D of Indian Vegetables”. The name of the dish will take you to the post. What a gorgeous collection of cross-cultural delights! You delighted and amazed me with your entries every week. I don’t know how you did it (I barely could make my entry every week!). This post will be bookmarked and referred to time and again.

B while you have baby fenugreek try making a dal with it especially with moong dal. It tastes awsome. I had posted a recipe long time ago.
