Bye, Bye, Cluri …

The nightmares are back. We’ve been hearing strange voices since she announced that event.
This time, Maa Anita Devi wields a rolling pin instead of a radish. Each night we wake up in a cold sweat, blinded by the bling and hearing her intone, very slowly,
“Fry some puris or else, (pregnant pause) I’ll flatten you like a papad.”
J wakes up totally shaken. He’s got a soft corner for animals. “I feel sorry for the poor little cat she’s sitting on. Does it have clogged arteries?”
B is more interested in the rolling pin. She’s thinking, “that’s a pretty one, but it’s got nothing on Indira’s one with the ridges“.
Dang, we don’t even know how to make puris. We’ve only made cluris before. Cluris are short for ‘cardboard-like puris’. The one time in our lives we tried to make puris, not one blasted one puffed up. In our book, a deep-fried disc of dough that doesn’t balloon up does not deserve to be called a puri. If we really want to eat cardboard, there’s nothing more reliable than store-bought pita bread. Plus, we had to contend with all that leftover oil that just would not get used up for months.
So, yeah, we had kinda resolved not to make puris. The last time either of us ate a puri (a puffed up one) was probably a decade ago, made by someone else.
To make things worse, balloons of dough started floating all over the blogosphere. There was even a pictorial that made puri-puffing look so dang easy.
And this gal, who claimed to never have made puris before, was really rubbing it in:
They puffed up beautifully and were a great colour, but I did not want to handle the camera with oily hands, hence don’t have the proof of any puffy pooris.
Good one, Nandita. We’re trying to believe you.
Between the two of us, we don’t have one decent puri to show for our entire lives. The only way to treat BlogPolar Disorder is to confront your demons.
So here’s the deal. B picked up the phone this afternoon and announced, “We’re making puris tonight.”.
J said, “Are you sure?”
B said, “Kinda”.
2 cups of atta (whole wheat flour, finely ground) went into a bowl with 3/4 cup warm water and some salt. It got kneaded into a stiff dough. It got covered with a plate and rested for a while, reflecting on a life well-led.
J : “Did you put semolina in the dough? My mom used to do that.”
B: “Too late. It’s resting now. Can’t disturb it with prickly stimuli.”
J sets up the tripod and camera.
Flour the board, roll, toss the disc of dough in the hot oil. Wait with bated breath.

There’s a tiny hole in it. Won’t puff up all the way. It’s a cluri.
Round 2: we roll it out a tad thicker.

Still puffs up only halfway, the other half is as stiff as a …. cluri.
Round 3: we make them smaller and really really thin.

Yay…. we have our first ever puris.
B: “J, what are we going to eat these with?”
J: “What do we have?”
Bee finds a can of mango pulp in the pantry. Her favourite way to eat puris is with aamras (mango pulp).

B: “J, wait a second. I thought you were going to make a side-dish with the puris.”
J: “Yeah. I’ll post about it tomorrow.”
B: “You mean we’re making more puris tomorrow?”
J: “Why ever not? Where are you going?”
B: “To blog about aamras-puri. Gotta send it to Anita”
J: “This is good stuff, but could you please ask her not to feed it to her cat?”

coffee, roopa – we dont own a kadai
had to make do with a flat bottom vessel. blogging is making us step outside our character – we might even go and buy a kadai which will require much lesser oil -j

This turned out to be way more fun than I ever imagined – first Nandita, now Jai and Bee! :devil: :rofl:
Manisha is complaining that the poori ate into this week and next week’s eating out!

PPS: I have two of those ridged rolling pins! Those are what I use to roll papad. And Paparia!

Had a good laugh reading abt the cluries :laugh: … But the pooris came out really well. and that too with aamras… yummy!!
ironically i never had much trouble getting pooris to puff but it took a huge amount of practice before I got round soft puffed rotis!!

Hey Bee, the puris are good. I too love to eat them with sugar (weird combi) not with any other thing. I have seen weird looks of waiters when I ask for sugar in hotels for puris :tongue: but I never mind! So aamras must be excellent. let me come home tomorrow!

I seldom make them, just because I don’t like the deep frying atmosphere around the house.
B&J, whenever I make them, the first couple of puris wouldn’t puff up either. I would blame it on the oil temperature. But from now on, they will be cluris here. haha!

Sweetheart I am still stuck in cruel cluri land. I had thought we’d form a support group of some sorts – show those talented bloggers like Anita & Indira – but no. You had to go and jump to the other side!
if you live in the bay area or new jersey, you can buy puris. if you live in the sticks like us, you can buy doughnuts and pretend you ate sweet puris. it’s not worth the bother making them at home. for every puri, there are three cluris. – b.

we use a regular thing. the most efficient way is to make balls of dough and sit on them. – b.
