Lime Pickles

Limes - Regular and Persian

When we planned to make lime pickles, we couldn’t decide between these two recipes.
We ended up making both, and it was a wise decision. The first was ready in a little over a week, and we enjoyed it while the latter cooked in the sun.

Left:
Lime Pickle from Mahanandi. Almost fat free (just 4 tsps. oil), and not too high in sodium (6 tsps salt), We made it with the little Persian limes, and the pickle was ready in 8 days. As for the taste, let’s just say, we made it six weeks ago, and there’s none left. We will be making some again. Thanks, Indira for this absolutely lip-smacking and healthy pickle.

Use non-iodised sea salt if you can, and atleast 3/4 cup of lime juice.

Right:
Lime Pickle from Indian Food Rocks. While Indira’s pickle uses cayenne powder, Manisha’s uses fresh green chillies. Three words to describe this pickle - to die for. Oil-free to boot. Ours took 3 weeks in the sun. There’s not much left. Manisha is the Rockstar of Pickle Makers and her lemon pickle will be attempted very soon.

    Lime juice concentrate ??
    Both the pickles look yummyyy…I have never been a huge fan of lime pickle, but their pairing with curd rice is one the best combos. I love the sweet lime pickle anytime though :D

    Hmmm…very very tempting. I love that first photo of limes.I am making some sweet pickle (maharashtrian style)with limes too.

    hmm lovely pics, my favorite way to eat lime is with hot pulka. looks like persian lemons have thin skin which makes it probably to pickle faster

    That wooden thing in the first picture - what’s it? A container or something you’ve adapted? Nice picture.

    I have made three kinds of lime pickles - one inspired by my mum’s, the other inspired by Manisha’s, and the third using kay-pra brand masala from Pune :shock: !! They are cooking while I enjoy three of of the older (different) ones!

    Send some sunshine my way, wont you, Bee and Jai? It’s been a miserable cold rainy summer so far - and NO sun! I’m going to CRY if I cant make Manisha’s pickle! :(

    shammi, manisha explains at the bottom of this post how she made it on the stovetop. Methinks a 200 or 225 F oven overnight may work. - b.

    Gorgeous photos! Have you tried pickling Bamboo shoots? Yummy,I have it at FH.Same ingredients,just add Bambooshoots.
    My cheeks are hurting now looking at those pickles!:))

    I don’t have any lemon pickle left! I gave it all away. I have some lime pickle left though. I have to make more soon.

    About the stove-top: it works but it’s not a true pickle and therefore lacks the oomph. In winter, though, it was the quickest way to replenish my supply. The wise Pelicano has spake about pickling and how warmth is more necessary than the sun.

    I just set my lime pickle yesterday! I’m using Manisha’s recipe but I switched things around. I used the lemon pickle spice ingredients for the lime pickle. Can’t wait to find out how it all comes out. :)
