Cranberry-Orange Jam

It feels good to be home again. I woke up this morning wondering which part of my body I was missing. The SEATBELT … that’s what it was. It becomes an extension of your anatomy after two flights and nearly 2000 miles of driving over 9 days. We missed you all, and will give you details and pictures after we sort them out.
We spent some time during our trip discovering Native American tradition and history. Cranberries have been an integral part of Native American cuisine and life as a food, fabric dye, and healing agent.
Cranberry: Health Benefits, Nutritional Profile
The Europeans who migrated to North America called it ‘craneberry‘ to denote the pink blossoms of the plant that appear in spring, and resemble the head and bill of a Sandhill crane. (See picture here)
Raw cranberries are sour and slightly bitter. When paired with a sweetener and/or fruit, they acquire a magical complexity. Cranberries and oranges make a particularly delicious pairing.
Dried cranberries may work in this recipe. Soak them for a few hours in the juice, and reduce the amount of honey/sugar by 1/4 cup or so.
We were inspired by this recipe from Mahanandi.

Navel and Blood Oranges
CRANBERRY-ORANGE JAM
Makes enough to fill one pasta sauce bottle (3 cups or so).
1 bag of fresh or frozen cranberries (12 ounces)
About 2.5 cups of peeled, seeded and chopped oranges
¼ cup orange juice
1 cup orange blossom honey (vegans can use maple syrup or sugar)
2-3 tablespoons orange zest
a pinch of salt
optional additions: a bit of grated ginger, 2 tablespoons Grand Marnier
1. Clean and sort cranberries, put them a pan with, oranges, ¾ cup honey/sugar, salt and juice and bring to a boil on medium heat, stirring once in a while. Partially cover the pan.
2. After about 15 minutes when everything breaks down and it starts to thicken, check the sweetness and add another ¼ cup of honey/sugar if you need it, and the zest.
3. Cook until it is the desired thickness. When you lift some of it with a spoon and drop it, it should flow very thickly. It will thicken further on cooling.
4. Cover it and let it cool for about 5 minutes. Put it in a sterilised jar (microwave the glass jar for 30 seconds) and close the lid. If you want to freeze it, don’t fill it right to the top. It will expand in the freezer.
5. Leave it outside for about 4 hours to cool completely, then refrigerate or freeze.
** Instead of fresh oranges, you can use 2 cups orange juice (total).
** If your jam is too thick, add a couple of tablespoons of orange juice, reheat it in the microwave, and mix it all together.

anytime you like. if feeding kids, it goes in first so that the alcohol burns off. if feeding yourself, i recommend some GM neat, and some with the jam, added with the zest. - b

it keeps a month or two. divide it and keep half in the freezer. keep it in the fridge always. - b.

Hope you had fun — in CO how could you not! Cranberry orange is a great combo — I don’t know how I could have forgotten that when Nupur was looking for her regional specialties. Cranberries are definitely a Massachusetts thing, too. Looks lovely!

Welcome back! And welcome cranberries…I made one of those cooked English-Indian chutneys with the cran-orange combo- great stuff! GM neat…and some in the jam…and I recall its use in an earlier post or two…can you not wait ’til after dinner? That stuff’ll make you do craaaaazy things in mid-day!

maybe i shud ask u this, the honey i’ve has crystallised & thickned quite a bit, is that normal? can it be used? thanks!
oh, yeah. the older the honey, the better the health value, it is believed. just microwave it for a few seconds to get it out of the container. - b

you can soak the cranberries in the juice for an hour or two, and reduce the sugar/honey in the recipe by 1/4 to 1/3 cup. - b.
