hey Bee, wanted to share this with you. I had found fresh green jack fruit in a Indian store here and believe me it was like as if I found treasure. lot of friends who blog asked me the recipe for Kathal biriyani. so I was more than happy and bought 2 huge jack fruits and after two days when I cut them found only huge seeds inside. I was so shocked. so I thought to atleast do something with the seeds but when I steamed them , they too didnt come out well. I don’t know why that happened. the jack fruit looked good from outside. it was such a disaster. about $15 into trash:( can you please tell me how to select a good one?

sorry to hear about this episode. frankly i don’t have too much experience with fresh green jackfruit. my grandma used to say that the time to harvest is when the the tips of the prickly bumps start turning little brown. If the skin is predominantly on the greener side then its good for chips and if it is yellowish and the fruit has an aroma then it is ready to be consumed as it is. Good jackfruit has to be firm outside. The one that we bought was almost yellowish green - so we asked the guy to cut it before we took it. Seems like you did not have any flesh to speak of, which is quite surprising actually, because if you have fully developed seeds as you found then typically there is lot of flesh. In any case, I am not being much help here. Hope you can still participate with canned jackfruit.
