Four weeks ago, we planted spinach, romaine, curly red lettuce, and peas. The weather has turned warmer, and the plants are happy. Last week we planted rainbow chard, which has started growing new leaves. Last night’s dinner comprised two salads …. one from our garden, one assembled with bought ingredients.


Garden Salad

We picked spinach, romaine, rainbow chard, pea shoots and curly red lettuce from our garden. We washed and dried them in our salad spinner. We tossed in some herbs from our indoor garden – pineapple sage, thai basil, purple basil, oregano, parsley.

We added some mandarin orange segments, dried cranberries and pistachios.

The dressing was simple – equal parts of rice vinegar and orange juice, a pinch each of salt, sugar and crushed black pepper.
