Baked French ‘fries’.

This easy peasy recipe works with a host of winter and root veggies - turnips, sweet potatoes, parsnips, maybe even carrots.


Hardware
1 stove
1 big pot
1 oven
1 baking sheet
1 clean tea towel

Software
1 russet potato
water
salt
spices
2 tablespoons oil (3 T if your spud looks like King Kong)

Method
1. Scrub, wash and dry the potato. Peeling is optional.

2. Put a pot of water on the stove to boil. Salt it. When it starts to come to a boil, cut the potato into french fries. Drop the pieces in the water and cook for 3-4 minutes, no more. We’re looking for half-cooked. Undercooked is better than overcooked.

3. Preheat the oven to 475F.

4. Put the potato pieces on the tea towel and gently roll them around.

5. Put the oil on the baking sheet, without a liner. Add the salt and spices of your choice. (We used Mrs. Dash salt-free lemon pepper seasoning, cayenne, coriander and cumin)

6. With your fingers, gently roll the potato pieces in the spice mix until they are kind of evenly coated.

7. Bake for 15 minutes, then mix them around once more and bake for 10-15 minutes.

Serve with Kicked-up Ketchup.

    Oh! I love this easy peasy healthy french fries. And that pic makes it all the more alluring.:)

    I guess plaintain would be good too but I’d love to try taro root(chaama dumpa).

    Yes, carrots too. I did this with carrots this (past) Thanksgiving (and blogged). Baked carrot is a totally different animal, err..vegetable! Very yum. But potato is king!

    Ah yes….the royal Spud. How I Love him…. I make these Fries too with regular and sweet potatoes..but I use Olive oil and a little bit of rosemary along with other spices…gives it a wonderful flavor. Your fries look very tempting in that blue bowl!

    My neighbor makes this with a medley of roots: the turnips taste the best! He uses parsnips, carrots, sweet potatoes and I remember urging him to try daikon as well. I like daikon even though it is so much larger than our Indian muli and not as sharp.

    This is my winter time snack favorite, sorta’ guilt free :)
    I have used this method with mooli (Manisha, its delish-Try it, NOW), carrots (Aww, Anita-its not an animal ;))and arbi/taro (Sailu, isn’t that Yumm) before, besides sweet potatoes-will try turnips this time.

    But, please try chatpata beet-root chips ladies, if you can. Sweet it is, spicy you make it :) Its hevenly with lemon salt, chilli peppers and oregano!

    Nice going Bee - as usual! What camera do you use? I use a Canon EOS Digital Rebel/EOS 300D Digital. I’m currently looking into purchasing some macro lens.

    That’s the same that we use. This was taken with a 50 mm f/1.4. Don’t own a macro but have taken couple pix with lens reversal - will write about that sometime — Jai

    hang on, hang on, jai’s got a macro-like fix for 8 dollars. save your 1000 bucks. or send them to me. we hardly use the macro thingy.- bee

    Bee, Jai, guess what? You’ve inspired me. Currently in the oven is my french fries! lol. Instead of a spice mix, I minced some fresh rosemary. Will take a pic when they come out of the oven and post on my blog with a link to you! Thanks for the inspiration.

    Yes baked is certainly much better. Actually my little one prefers these to the fried variety. We normally use potatoes, sweet potatoes and kohlrabi and make dip creations for our weekend movie sessions. Great pic BTW!

    No oil? No brushing of oil on the baking tray? Really?

    This looks too good!

    There’s 2T oil in the recipe to just lightly coat.
